This early harvest olive oil obtains its name to the early harvest of the olive, which usually dates in December or January to produce high quality olive oils. In these months, the olive is not fully ripenned, with its oil having intense smell and flavors, ideal to consume it raw in fresh produce. It will also offer a perfect balance between aroma and taste, with bitter and spicy touches. Its properties include a high contain of polyphenols, which has anti-inflammatory and clotpreventive properties. (It was observed that the response and function of the blood vessels improve during the first four hours after having meals with polyphenol-rich oils.) Besides being early harvested products, Uzunyuva Celestial Edition Olive Oils are doubled in taste and quality by cold pressing them which meant treating them under 270 C heat in production. Studies show that cold pressed olive oils are rich in healthy fats, vitamins E and K, several antioxidants and anti-inflammatory compounds that may promote brain and heart health, in addition to other benefits. Being produced in Milas from Milas Memecik Variety Olives, Uzunyuva Celestial Edition has the honour of carrying the Milas Memecik Olive Oil Protected Geographical Indication label and they are considered as very unique products with their special and distinctive flavors.
